I used the new sauté pan for the first time last night to prepare a curry dish. I didn't cook from a recipe. I improvised with things I had on hand, but I made note of what I used and present it for you now. Rogan Josh is traditionally made with lamb, beef, or vegetables, but I've never been one to abide by tradition.
Shrimp Rogan Josh with Basmati Rice
- 1 pound peeled and deveined shrimp, fresh or frozen
- 2 medium onions, coarsely chopped
- 5 cloves of garlic, diced
- Extra virgin olive oil
- Sea salt
- 1 jar Patak's Spicy Tomato and Cardamom Cooking Sauce
- 1 can light coconut milk
- 2 cups Basmati rice
- 2½ cups water
- 1 tsp. butter or extra virgin olive oil
Heat your pan and drizzle with a couple of tablespoons of olive oil. Add the onion and cook for a few minutes on medium high heat. Add the garlic and sprinkle with salt. Continue to cook, stirring often, until the onion softens. Add the shrimp and cook until almost done.
While you are doing this, in a medium sauce pan bring the 2½ cups of water and the butter or oil to a boil. Add the rice, stir, and let boil for one minute. Cover, reduce heat to low, and continue to cook for 12 minutes.
Next, add the Patak's sauce to the sauté pan and stir. Cook for several more minutes until sauce is heated. Add the coconut milk and stir to mix. Lower heat and continue cooking, uncovered, until the rice is done.
Serve the Rogan Josh over the Basmati rice. Makes approximately 4-6 servings depending on your appetite.

OMG, that sounds incredible. I guess you could use really any meat with it - I'm a big chicken fan, so perhaps I'll try it with that instead.

Many large grocery chains carry Patak's sauces and pastes, but if you can't find them there, try any ethnic markets you have in your area.
And there are many online sources as well.
